The Best (& Easiest) Chicken Alfredo!

The best chicken alfredo I've had was also one of the easiest things I've ever made! Alfredo sauce seems pretty intimidating, but it's actually a whole lot easier than you think! This recipe is a little bit more pricey compared to my past recipes, but I think that you'll love it and it can be your little splurge! Let's get started!

You'll need:
1          Package of chicken breast tenderloins
1/2       Cup of butter
1          8 oz package of cream cheese
2          Cups of milk
1          5 oz tub of Frigo Parmesan cheese

Pepper
Garlic Salt
Garlic Powder

Chicken:
1. Season your chicken with garlic salt and pepper. Remember, season lightly because you can add seasoning, not take it away.
2. Cut your chicken into small chunks.
3. Saute the chicken in a skillet. I used canola oil to cook it in.

Sauce:
1. Melt butter in a medium sauce pan.
2. Melt cream cheese into butter. Whisk until it is smooth.
3. SLOWLY add the milk while whisking. Make sure to keep the mixture smooth.
4. Add Parmesan cheese, stir until melted.
5. Add pepper and garlic powder to taste.

I served my sauce and chicken over fettuccine noodles, but you can use whatever you would like. I think all together this cost me about $14 at Wal-Mart. I did fix French bread to go with the pasta. All I did was cut the bread apart and put butter and garlic powder  and I popped it in the oven at about 200 degrees and let it toast while I was fixing everything else. Enjoy!

5 Step Chicken Cordon Bleu

2               Boneless, Skinless Chicken Breasts
1 Cup       Plain Bread Crumbs
3 Tbsp      Melted Butter
4 slices      Swiss Cheese
4 slices      White American Cheese
8 slices      Ham

1. Preheat your oven to 350 degrees Fahrenheit.

2. Slice your chicken breasts lengthwise (you will end up with four chicken breasts) and place them on a           baking dish (I used a cookie sheet lined with tin foil). Dust chicken with salt and pepper for taste.

3. Mix bread crumbs and melted butter.

4. Layer cheeses and ham on top of chicken. I placed my American cheese directly on to the chicken, then       two slices of ham, then my Swiss. Add bread crumbs on top of ham and cheese.

5. Place in the oven to bake for 40-45 minutes. PLEASE make sure  your chicken cooks all the way                 through!

And, like always, we'll check out the pricing!

My chicken was the most expensive part of this meal. It cost $5.28 for two HUGE chicken breasts.
The bread crumbs were $1.08 and I can use the remainder of them again.
The four slices of Swiss cheese cost $1.60 and the White American cheese was $1.02.
Just like in my breakfast pizza recipe, I bought the small package of ham. It cost $0.64.

So,

$5.28
$1.08
$1.60
$1.02
$0.64
$9.62

My hometown has a 5.7% tax on groceries, so there was $0.55 of tax bringing us to a grand total of $10.17 for this meal!

Double Chocolate Coffee Drink

1    Large coffee cup
3/4 cup coffee
3/4 cup milk
2    Tablespoons Chocolate syrup
1    Package of Hot Chocolate mix

This coffee drink is extremely simple to make, and it's done with things we typically have around the kitchen!

Simply brew your coffee, heat your milk, then combine ALL of the ingredients! You have a nice coffee drink that has the sweetness of the chocolate, the slight bitterness and the caffine of the coffee. It tastes great hot or cold! This is a great alternative to Starbucks or any campus coffee shop! Think of how inexpensive it will be!

Welcome to All!

Welcome to my blog!

This blog is going to be dedicated to bringing you delicious recipes on a budget! Yes, the title of the blog is 'Eating for College Students', however my recipes will be great for anyone needing a break in their grocery shopping!

Every once in a while I will bring you a recipe that may cost a little bit extra, but I will try to keep the prices low. A lot of things people don't realize is that purchasing off brand groceries can almost cut your costs in half! Honestly, the off brands (typically) taste just as good, if not better, than big name brands!

So, I HATE to be cheesy, but with all of this being said, LET THE HUNGER GAMES BEGIN! May your grocery store have prices ever in your favor!

Love, Erin
